The Tri Tip is pre-cooked to medium rare and just needs to be reheated and then finished with a sear or char. See below for preparation instructions

Instructions

Microwave + Grill

Step 1: Prep Instructions

Preheat gas or charcoal grill to 450 degrees. Remove Tri Tip from all packaging, pat dry with a paper towel, and place the meat in the microwave on a microwave safe plate. Heat in microwave on high power for 30 seconds per side, per pound.*

Example: A 2lb Tri Tip would require 1 minute per side in the microwave.

Step 2: Sear Instructions

Place the warmed Tri Tip onto pre-heated grill on direct heat, and cook until the outside is seared to your liking. We found the best results are at about 2-3 minutes per side or until grill marks form. Once finished, remove from the grill and transfer to a cutting board.

Pro Tip: Direct contact with the flame is preferred to get the best charring and flavor. Ensure you watch the Tri Tip to avoid burning the outside, flipping it as needed.

Step 3: Slicing Instructions

  1. Once it has been seared, transfer to cutting board and with large knife slice against the grain into your preferred portion sizes. Our chef recommends slicing into 1/8th inch slices, and finishing with a pinch of salt over the sliced meat or use in your favorite recipes.

Because of the magic of sous vide, the Tri Tip does not need N to rest after the searing step.

The trip tip has 2 different grains so you have to slice it in half, then slice each half against the grain.

1. Find the center point, where the two grains meet.
2. Cut tri tip in half vertically at the grain intersection line.
3. Cut each tri tip half in a perpendicular cutting motion on the dotted lines, as shown above. Slicing thinner pieces against the grain can help you get the most of this cut.
Optional: Spicy Steak Sauce

When you cut open the vacuum sealed bag, pour the broth inside of the bag into a small microwave safe bowl. Add the following and mix thoroughly with a fork or whisk:
1 tbsp Soy sauce
2 tbsp yellow or Dijon mustard
2 tbsp cream
½ tbsp ketchup
Place the bowl in the microwave, and heat covered on high for 2 minutes. Stir, and serve with the Tri Tip.
